Pont Brasserie at InterContinental Sydney

InterContinental Sydney opens its ground floor restaurant Pont Brasserie this week, led by French-trained Head Chef John Lyons.

The latest addition in a broader transformation of Sydney’s sandstone quarter into one of the city’s most dynamic dining precincts, Pont Brasserie will offer contemporary brasserie-style dishes with a twist.

With an entrance on Bridge Street – “Rue du Pont’’ in French –  the restaurant design features deep rich tones with heritage features and dark timber floors.

Adjoining the main dining room, there is a private dining room for up to 12 guests and a semi-private dining space for up to 25 guests.

Lyons – who has worked at Michelin-starred Rascasse in Leeds, England and more recently at Cottage Point Inn in the Ku-ring-ai National Park – introduces a menu of hearty food with bold flavours using seasonal Australian produce.

“In such a prestigious location we have a responsibility to showcase the best of Sydney and Australia but also bring joy and an element of playfulness to the dining experience,” he said.

“We also want to ensure the menu and friendly, efficient service appeals to both time-strapped corporates, as well as our international and local hotel guests and those simply looking for a leisurely long lunch and a distinctive Australian dining experience.”

Restaurant General Manager Erez Gordon brings experience from some of Australia’s most awarded dining rooms, as well as from the wine world.

“Restaurants are in my blood, but it was going to take something special to tempt me back into the cut and thrust of daily service. Pont Brasserie is that special something,” said Gordon.

Pont Brasserie is the newest addition to InterContinental Sydney owner Mulpha’s growing hospitality portfolio, which includes Bar Messenger at Circular Quay, Sydney, Isla Cantina, Ioesco Cucina and Cove Tavern in Queensland, Bimbadgen winery and its award-winning Esca restaurant, wedding venue Palmers Lane and Emma’s Cottage Vineyard in the Hunter Valley, InterContinental Sanctuary Cove Resort, InterContinental Sydney, and InterContinental Hayman Island.
