Bannisters Pavilion will open in Mollymook on December 1, 2015.

The new boutique hotel will offer 33 guest rooms and 2 penthouse suites. The sister property to Bannisters by the Sea is 900m from the original property and 100m from Mollymook Beach.

A highlight of Bannisters Pavilion will be the sun bed-lined rooftop with private lounge spaces, a bar-and-grill and a suspended pool.Rooftop Pavillion Bar

The rooftop was designed to allow guests to move seamlessly between the pool, bar-and-grill and lounge areas to take full advantage of the food and beverage options, available from noon. Food will be inspired by Mediterranean, Southern Californian and Mexican cuisines, complemented by seasonal cocktails, craft beers and an Australia-focused wine list. Rick Stein won’t be doing the food and will instead be handing the culinary reins over to one of his protégés.

Bannisters Pavilion is a collaboration between owner Peter Cosgrove, architect Tony Freeman (Molnar Freeman), interior designers Mia Ward (Wiwa Design), Romy Alwill (Alwill Interiors) and landscape designer William Dangar.

Alwill said of the décor, “Think earthy, modern, edgy-but-refined and very light, open contemporary spaces. There is also a nuance of Scandinavian design with light timber, dark charcoal and soft brass trimmings.”

Bannisters Pavilion is a three-hour drive from Sydney or a two-and-a-half hour drive from Canberra and is located at 87 Tallwood Ave, Mollymook Beach.
