“His experience and willingness to experiment and drive innovative dining and lifestyle concepts is something we know will resonate with the hotel’s clientele, and other visitors to the Wunderlich precinct more broadly in the months to come.”
Mellor is hoping to build on a strong pre-opening team with further additions.
“We have a unique opportunity to showcase our authentic Sydney story to our guests,” he said.
“So, we’re on the lookout for truly exceptional hospitality professionals, who not only embody our brand values, but love Redfern and Surry Hills, and have hospitality and the guest experience at their core.”
“We already have some superstars in our pre-opening team across operations, guest experience, sales and marketing, so we are looking to build on our already incredibly solid base.”
