QT Singapore has enlisted award-winning chef and restaurateur, Sean Connolly, as its Creative Director of Food and Beverage, and peeled back the curtain on a number of signature dining experiences ahead of its September opening.
Connolly, who is responsible for delivering multi-award-winning experiences at Gowings, QT Sydney and Esther, QT Auckland, brings his expertise to the historic Singapore property at 35 Robinson Road, formally known as Hotel Telegraph.
Cygnet, an all-day bar and grill will embody a buzzing Manhattan steakhouse, while the rooftop will be transformed into “the must-visit pool and bar for indulgent cocktails”.
“QT Hotels have consistently redefined hotel food and beverage experiences and I’m excited to introduce to Singapore – a haven for food enthusiasts – an approachable bar and grill experience in the form of Cygnet,” said Connolly.
“My cooking philosophy starts with sourcing the best ingredients from around the world, cooking with French influence, bringing authenticity to the table and most of all, having some fun.
“Cygnet and Rooftop by QT promise to enhance the already vibrant local food and beverage scene, and perfectly complements the eclectic ambience that awaits guests at QT Singapore.”
At Cygnet, QT’s curated music and an expert service team will create a warm ambiance, while the menu will deliver top-quality proteins and produce with rich flavours, alongside a New York-inspired cocktail offering and extensive wine list. Two private dining rooms will facilitate curated dining experiences.
Rooftop at QT, already recognised in Australia and New Zealand, will launch in Singapore with refreshing cocktails, an extensive beverage list in an open-air setting.
The property, owned by Sunray Singapore, is currently undergoing a complete transformation in preparation for QT Hotels and Resorts South East Asia debut.
“We are counting down to the opening of Cygnet and Rooftop at QT which we know will become institutional dining hotspots for both Singapore locals and hotel guests,” said Sunray Singapore Owner, Charles Tan.
“Singapore has a rich and diverse food scene, and these venues will bring a new flavour to our shores.”
